Want pizza but don’t want to blow your healthy diet? Try making this alternative, with zucchini crust instead of bread. Wash and grate 2 zucchinis. Drain the excess liquid from the zucchini. You want to get as much liquid as possible out. You can use cheesecloth to help press it out. In a bowl, mix the grated zucchini with one large egg, a cup of mozzarella cheese, and salt, pepper, and garlic to taste. Spread the mixture over parchment on a baking sheet or pizza stone. Bake for 15 minutes at 450ยบ F, and then add your sauce, cheese, and toppings and bake for another 10. You’ll be amazed at how delicious this alternative to regular crust is.
