If you’re tired of a traditional omelet for breakfast, or want to get away from oatmeal or cereal, consider this. You can cook eggs in a bell pepper for alternative that is easy enough to enjoy daily, and beautiful enough to serve at brunch.
Slice your bell pepper width wise, making little rings. Place the bell pepper rings in an oiled skillet, once they’ve cooked a little bit, flip them over and pour an egg into the center. Cook as long as desired depending on how you want your egg. You could also just pour egg whites with chopped spinach and feta cheese. You can add any ingredients and be creative. Enjoy!
